Grilled Chicken, Beet and Goat Cheese Salad

I love leftovers! Not because I eat them the same way I did the night before, but because I can transform them into a completely different meal. We had made BBQ chicken breast the night before and seasoned it with my new favourite. Next time you want to season chicken on the BBQ, try your Montreal STEAK spice...it's amazing! I dished out a large amount of mixed greens, because let's be honest, you need a lot of salad if it's going to be your whole meal! I had cooked beets on hand. Yes, on hand. I buy the pre-cooked packaged ones from Costco and they are amazing! I roasted some pine nuts to give it a toasty flavour and generously added goat cheese. I laid the chicken on top and drizzled my mixture of lemon infused oil and Alfoos Mango vinaigrette. Cracked black pepper on top and VOILA!
The creaminess of the goat cheese is the perfect balance to the mango, and the spice on the chicken and the pine nuts bring out the flavour of the beets…all in all a fantastic lunch and easily one of my favourite, off the cuff lunchtime creations!
